Cauliflower roasted with hot honey and Dijon mustard is the savory hero in this delicious cheesy appetizer. And as a bonus, it makes a great vegetarian option to serve at your next party.

Heat oven to 425°F.
Toss cauliflower with mustard and half the honey; spread onto foil-covered rimmed baking sheet sprayed with cooking spray.
Bake 15 to 18 min. or until cauliflower is crisp-tender and lightly browned.
Decrease oven temperature to 350°F.
Cut cheese into 12 slices, then cut each cheese slice crosswise in half. Place crackers in single layer on second foil-covered baking sheet; top with cheese and cauliflower.
Bake 3 to 5 min. or until cheese begins to melt.
Sprinkle topped crackers with onions; drizzle with remaining honey. Serve warm.
