Dreaming of vacationing on a warm beach but not headed there any time soon? Make these coconut and mango ice cream sandwich desserts to at least feel like you're there!
Ingredient list
- 1 cup mango ice cream, slightly softened
- 16 CHIPS AHOY! Cookies
- ⅓ cup flaked coconut, toasted
Directions
Spread 2 Tbsp. ice cream onto flat side of each of 8 cookies.
Cover with remaining cookies to make 8 sandwiches. Roll edges in coconut.
Freeze 2 hours or until firm.
