TRISCUIT Baked "Lasagna"

Ingredient list

  • 2 cups tightly packed baby spinach leaves
  • 1 Tbsp. water
  • 1 container (15 oz.) part-skim ricotta cheese
  • 1 cup shredded low-moisture part-skim mozzarella cheese
  • 3 Tbsp. grated Parmesan cheese, divided
  • 1¾ cups marinara sauce, divided
  • 45 TRISCUIT Crackers, divided

Heat oven to 375°F.

Microwave spinach and water in microwaveable bowl on HIGH 30 sec. to 1 min. or until spinach is wilted; drain, then squeeze dry. Cool slightly.

Chop spinach; place in medium bowl.  Add ricotta, mozzarella and 2 Tbsp. Parmesan cheese; mix well.

Remove 1 cup marinara sauce; refrigerate until ready to use. Spread 1/4 cup of the remaining marinara sauce onto bottom of 11x7-inch baking dish sprayed with cooking spray; top with 15 crackers, in 5 rows of 3 crackers each. Cover with layers of half the spinach mixture, 1/4 cup of the remaining marinara sauce and 15 of the remaining crackers. Top with layers of remaining spinach mixture, marinara sauce, crackers and Parmesan cheese.  Cover.

Bake 30 min.; uncover.  Bake additional 5 to 10 min. or until crackers are golden brown, and "lasagna" is hot and bubbly. Cool 5 min. before cutting into squares. Meanwhile, warm reserved marinara.

Serve topped with the reserved marinara sauce.
