Ingredient list

  • 6 medium apples
  • 12 NEWTONS Fat Free Fig Fruit Chewy Cookies, coarsely chopped
  • ½ tsp. ground cinnamon
  • ½ tsp. grated lemon zest
  • 2 tsp. margarine or butter
  • 1 cup unsweetened apple juice
  • 2 Tbsp. lemon juice

Core apples, removing seeds and pulp to make 1-1/4-inch wide cavity. zest off strip around top of each apple.

Mix chopped cookies, cinnamon and lemon peel. Spoon into apple cavities; press filling firmly into each cavity.

Place apples in 13x9-inch baking dish. Dot tops of apples with margarine. Mix apple juice and lemon juice; drizzle over apples.

Bake at 350°F for 45 to 55 minutes or until apples are tender. Serve warm.
