  • 28 TRISCUIT Cracked Pepper & Olive Oil Cracker s, divided
  • ½ lb. ground chicken
  • ½ tsp. zest and 1 tsp. juice from 1 lemon, divided
  • ½ tsp. chopped fresh oregano
  • 3 Tbsp. plain nonfat Greek-style yogurt
  • Dash ground red pepper (cayenne)
  • 18 baby spinach leaves
  • 3 Tbsp. finely chopped tomato es

Crush 10 crackers finely. Mix with chicken, lemon zest and oregano just until blended. Shape into 18 (1-inch) patties. Cook in nonstick skillet on medium-high heat 2 to 3 min. on each side or until done (165°F).

Mix yogurt, red pepper and lemon juice until blended.

Top remaining crackers with spinach, burgers, yogurt mixture and tomatoes just before serving.
