Makes 13 servings, about 2 Tbsp. each.

Ingredient list

  • 1 cup raw cashews
  • 3 red beets, roasted, peeled
  • 2 tsp. zest and 2 Tbsp. juice from 1 lemon
  • 2 Tbsp. chopped fresh mint
  • Freshly ground black pepper, to taste

Directions

Place nuts in small bowl.  Add enough cold water to completely cover nuts. Cover with plastic wrap.

Let stand at room temperature 2 hours.

Drain nuts, reserving 3 Tbsp. water; Place nuts in blender. Add all remaining ingredients except reserved water; blend until smooth, gradually adding reserved water until dip is creamy and of desired consistency.

Recipe Tips

  • Preventing Beet StainsWhen handling cooked or canned beets, it's easy to stain your hands and cutting board from the juices. To prevent this, wear disposable latex gloves and cut beets on a large glass or ceramic plate rather than a cutting board.
  • How to Roast Beets

    Heat oven to 425°F. Trim beets, then loosely wrap in aluminum foil. Bake 30 to 40 min. or until tender. Cool completely, then peel and discard outer skin. Refrigerate up to 3 days.

  • Special Extra

    Garnish with a sprinkle of toasted sesame seed and a few fresh mint leaves before serving.

  • Use Your Immersion Blender

    Soak and drain the nuts as directed. Place the nuts in medium deep bowl.; Add all remaining ingredients except the reserved water; Use an immersion blender to blend the ingredients until smooth, gradually adding the reserved water until dip is creamy and of desired consistency.

  • Note

    The nuts can soak in the water up to 12 hours in the refrigerator before draining and using as directed.
