Heat oven to 400°F.
Whisk eggs and 2 Tbsp. Sriracha sauce in shallow dish until blended. Add cracker crumbs to second shallow dish.
Spray foil-covered baking sheet with cooking spray. Dip 1 chicken piece into egg mixture, then crumb mixture, turning to evenly coat both sides of each chicken piece with each ingredient. Press crumbs gently into chicken to secure; place on prepared baking sheet. Repeat with remaining chicken pieces. Spray chicken pieces lightly with cooking spray.
Bake 5 to 10 min. or until chicken is done. Meanwhile, mix mayonnaise and remaining Sriracha sauce in serving bowl until blended; place on large platter.
Add lettuce and chicken strips to platter. Place carrots, peppers and onions in separate bowls, then add to platter.
Invite your guests to top lettuce leaves with remaining ingredients to make their own lettuce wrap.
