Heat grill to medium heat.
Toss chicken with Cajun seasoning. Grill 4 to 5 min. on each side or until done. Cool 5 min.
Meanwhile, heat oil in small skillet on medium heat. Add peppers; cook 2 min. or until crisp-tender, stirring frequently.
Cut each chicken tender into 8 slices.
Top crackers with peppers and chicken; drizzle with dressing.
