Get a head start on the best pulled pork mini sandwich appetizers by using sofrito tomato sauce, which has peppers, onions and tomatoes. These bites are full of flavor!

Makes 8 servings, 2 cracker sandwiches each.
Heat oven to 350°F.
Heat oil in medium skillet on medium heat. Add sofrito sauce; cook and stir 2 min. Add meat; cook 2 min. or until heated through, stirring frequently. Remove from heat.
Place 16 crackers in single layer on baking sheet; top with cheese.
Bake 3 min. or until cheese is melted.
Top with meat mixture and remaining crackers to make 16 sandwiches.
The meat mixture can be cooked ahead of time. Cool, then refrigerate up to 24 hours. When ready to serve, microwave meat mixture on HIGH 1 to 2 min. or until heated through, then use to top crackers with remaining ingredients as directed.
Sofrito tomato sauce can be found in your supermarket's freezer case. Thaw before using for this tasty topper. If you can't find the frozen variety, use the jarred sauce which can be found where the salsa or other Hispanic foods are found in your supermarket.
Be sure to use a pulled pork that is cooked without barbecue sauce, so that the flavor of the sofrito sauce comes through.
