Cut out these rich cheesecake bars with a star-shaped cookie cutter, then decorate with icing and sprinkles for luscious patriotic treats.

Heat oven to 350°F.
Line 13x9-inch pan with foil with ends of foil extending over sides. Combine graham crumbs, butter and 3 Tbsp. sugar; press onto bottom of prepared pan.
Beat cream cheese, vanilla and 3/4 cup sugar in large bowl with mixer until well blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
Bake 30 min. or until center of cheesecake is almost set. Cool completely.
Refrigerate cheesecake several hours.
Remove cheesecake from pan using foil handles. Cut cheesecake into shapes using a medium star-shaped cookie cutter. (Reserve trimmings for snacking or another use.)
Decorate cutouts with gels and sprinkles as desired.
