1

Cut green top off onion.  Discard white part of onion or reserve it for another use. Cut green onion top into 3 lengthwise strips.  Cut 1 strip into 5-inch length, then cut each of the 2 remaining strips into 2-inch lengths. Discard trimmed onion pieces.  Make small cuts in one short end of each short strip to resemble fringe on a scarf.

2

Spread small amount of cream cheese onto 1 RITZ Bits Cheese cracker; cover with second RITZ Bits cracker, gently pressing top RITZ Bits into cream cheese to secure. Spread some of the remaining cream cheese onto center of 1 RITZ Cracker; top with RITZ Bits stack, gently pressing stack into cream cheese to secure.  Set aside.

3

Reserve 2 tsp. of the remaining cream cheese for later use.  Place remaining cream cheese in medium bowl. Add dressing mix and shredded cheese; mix well. Shape 2/3 of the cream cheese mixture into large ball, then shape remaining cream cheese mixture into smaller ball.

4

Sprinkle cheese balls with Parmesan cheese; gently press Parmesan cheese into each cheese ball.  Place large cheese ball on large serving board or platter, gently pressing cheese ball onto board to flatten bottom slightly. Spread 1-1/2 tsp. of the reserved cream cheese onto top of large cheese ball. Top with remaining cheese ball, gently pressing top cheese ball into bottom cheese ball to secure.

5

Wrap long green onion strip around neck of snowman, then gently press both short green onion strips into cream cheese ball for the snowman's scarf as shown in photo.  Add peppercorns for the snowman's eyes, mouth and buttons as shown in photo. Add carrot piece for the nose. Attach hat to top of cheese ball, using remaining reserved cream cheese to secure hat to snowman's head. Insert rosemary sprigs into snowman for it's arms.

6

Arrange TRISCUIT Crackers, WHEAT THINS Snacks and additional RITZ Crackers around snowman on board. Fill in any empty spaces on board with bell peppers, baby carrots and celery.

7

Use a guideline of 2 Tbsp. cheese spread and 1 oz. (or labeled serving size) of crackers* per person.  Have plenty of RITZ Crackers, TRISCUIT Crackers and WHEAT THINS Snacks available for guests to choose from along with the veggies.  *Serving size of RITZ Crackers is 1/2 oz.
