Line 13x9-inch pan with foil, with ends of foil extending over sides; spray with cooking spray. Chop 5 cookies; reserve for later use.
Crush remaining cookies into fine crumbs; mix with butter and 1 tsp. cinnamon. Press onto bottom of prepared pan. Refrigerate 30 min.
Beat Neufchatel cheese, vanilla, 1/2 cup sugar and 3/4 tsp. of the remaining cinnamon in large bowl with mixer until blended. Gently stir in whipped topping. Spread onto crust.
Combine reserved chopped cookies with remaining sugar and cinnamon; sprinkle over cream cheese mixture.
Refrigerate 4 hours. Use foil handles to remove cheesecake from pan before cutting into bars.
