Place 12 cookies, top sides down, in single layer on parchment-covered rimmed baking sheet.
Top with pie filling, then whipped topping.
Cover with remaining cookies, top sides up, to make 12 sandwiches.
Refrigerate 2 hours or just until cookies are slightly softened. (Cookies should still be slightly crisp.)
Drizzle cookie sandwiches with caramel topping, then chocolate sauce just before serving.
Decorate with multi-colored sprinkles geared to the occasion. For a sports-themed party, use sprinkles in the color(s) of your favorite team(s).
Refrigerating the filled cookies for at least 6 hours will completely soften the cookies to a cake-like texture, reminiscent of a traditional whoopie pie. The filled cookies can be refrigerated up to 3 days. As directed in the recipe, top with the caramel topping, chocolate sauce and sprinkles just before serving.
