Makes 8 servings, 1 cup soup and 5 crackers each.
Heat oil in large saucepan on medium-high heat. Add vegetables; cook and stir 3 to 5 min. or until crisp-tender.
Add broth, water and thyme; stir. Bring to boil. Stir in rice; simmer on medium-low heat 15 min., stirring occasionally. Add turkey; simmer 5 min. or until rice is tender and turkey is heated through, stirring occasionally.
Stir in parsley just before serving. Serve with crackers.
