Heat oven to 350°F.
Place graham squares in single layer on baking sheet.
Fill small shallow bowl with about 1/4 cup water; place sprinkles in separate small bowl. Dip 1 marshmallow into water, turning to evenly moisten all sides of marshmallow with water. Gently shake marshmallow to remove excess water, then roll marshmallow evenly in sprinkles. Place on 1 graham square.
Repeat with remaining marshmallows and sprinkles, and 3 of the remaining graham squares. (You should have a total of 4 topped graham squares.)
Bake 2 to 2-1/2 min. or until marshmallows are puffed. Immediately place 1 chocolate piece on top of each of the 4 untopped graham squares. Sandwich chocolate- and marshmallow-topped graham squares to make 4 s'mores. Gently press top graham squares to secure.
