Makes 6 servings, 4 topped crackers each.
Heat oven to 350°F.
Add potato slices to saucepan of boiling water; cook 8 to 10 min. or just until potatoes are tender.
Use slotted spoon to transfer potatoes to bowl of ice water; let stand until potatoes are completely cooled. Drain on paper towels.
Place crackers in single layer on baking sheet; top with sweet potatoes. Add 1 pecan piece to each topped cracker to resemble a stem on a pumpkin, gently pressing pecan into potato to secure.
Top with marshmallows, cut sides down; sprinkle with pumpkin pie spice.
Bake 5 min. or until potatoes are heated through and marshmallows start to puff.
You will need about 2 small sweet potatoes (about 1/2 lb.) to get the 24 slices needed to prepare this recipe. For best results, look for long thin potatoes which when sliced will fit on tops of crackers. If the potato ends are tapered, you may need to trim and discard the ends before slicing the potatoes. If small sweet potatoes are not available, try cutting a large sweet potato into 1/4-inch-thick slices, then cut each slice into thirds or quarters to get the 24 sweet potato pieces needed to prepare this recipe.
Prepare using sliced leftover cooked or canned sweet potatoes.
Prepare using glazed pecan halves.
