Ingredient list

  • 1 canned chipotle pepper in adobo sauce, finely chopped
  • 1 Tbsp. olive oil
  • ½ tsp. dried oregano leaves
  • ½ tsp. ground cumin
  • ⅛ tsp. chili powder
  • 1 Tbsp. zest and 2 Tbsp. juice from 1 large lime, divided
  • 18 uncooked medium shrimp, peeled, deveined
  • 18 RITZ Crackers
  • 2 Tbsp. chipotle mayonnaise
  • ⅓ cup black bean and corn salsa

Combine peppers, oil, dry seasonings and lime juice in medium bowl. Add shrimp; mix lightly. Refrigerate 15 min.


Drain shrimp; discard oil mixture. Cook shrimp in large nonstick skillet on medium-high heat 2 to 3 min. on each side or until shrimp turn pink. Remove from heat.


Top crackers with mayonnaise, salsa and shrimp. Sprinkle with lime zest.
