Mexican "Pizzas"

These bite size Mexican pizza appetizers are the perfect addition to your next fiesta! Seasoned meat and melty pepper Jack cheese are sandwiched between crackers.

Makes 12 servings, 2 cracker sandwiches each.

Ingredient list

6 oz. lean ground beef
2 Tbsp. reduced-sodium fajita seasoning mix
2 Tbsp. water
48 RITZ Crackers
6 pepper Jack cheese slices (3/4 oz. each), each cut into 8 pieces
⅓ cup shredded iceberg lettuce
2 Tbsp. sour cream
2 Tbsp. finely chopped tomatoes
24 black oliveslices

Directions

Heat oven to 350°F.

Brown meat in skillet on medium-high heat, stirring frequently. Add fajita seasoning mix and water; cook 2 min., stirring frequently.

Place crackers, top sides down, in single layer on baking sheet; top with cheese. Bake 3 min. or until cheese is melted.

Top 24 crackers with meat mixture; cover with remaining crackers, cheese sides down. Top with remaining ingredients.
