Blend first 3 ingredients in blender until smooth.
Dip shrimp in egg; coat with cracker crumbs.
Heat oil in large saucepan to 350°F to 375°F. Add shrimp, in batches; cook 2 to 3 min. or until shrimp is golden brown and done. Remove from saucepan; drain on paper towels. Serve with mango sauce.
Fresh shrimp should be firm, moist and translucent and should smell like the sea. Avoid those with black spots and any trace of ammonia odor. They can vary in color from grayish-green to pinkish-tan to light pink. Place in a bowl (if wrapped in plastic, punch a few holes in the plastic) and store in the coldest part of the refrigerator up to 1 day.
Add 1/4 tsp. ground red pepper (cayenne) to both the cracker mixture and mango sauce for a nice kick.
Serve with cooked rice and a steamed vegetable.
