Makes 6 servings, 4 topped crackers each.
Mix first 3 ingredients until blended.
Cut avocado piece lengthwise in half, then cut each half crosswise into 12 slices.
Top crackers with avocados, chicken, mayonnaise mixture and coconut.
Toasting coconut is easy. Just spread coconut evenly onto bottom of shallow baking pan. Bake in 350°F oven 7 to 10 min. or until coconut is lightly browned, stirring frequently. Or, spread coconut onto bottom of microwaveable pie plate. Microwave on HIGH 3 min. or until coconut is lightly browned, stirring every minute. Watch carefully as coconut can easily burn!
