Ingredients
- ½ lb. beef skirt steak
- 1 Tbsp. olive oil
- 4 mini sweet peppers, sliced
- 1 small red onion, sliced
- 1 Tbsp. fajita seasoning mix
- ¼ cup water
- ½ cup shredded reduced-fat cheddar cheese
- ¼ cup light sour cream
- ¼ cup chopped tomatoes
- ¼ cup chopped avocados
- 2 green onions, chopped
- 1 Tbsp. fresh cilantro

Preparation
- Cut steak across the grain into thin slices, then cut each slice in half.
- Heat oil in medium cast-iron skillet on medium-high heat. Add meat; cook and stir 4 to 5 min. or until browned. Remove meat from skillet; set aside.
- Add peppers and onions to skillet; cook 3 to 5 min. or until crisp-tender, stirring frequently.
- Return meat to skillet. Add water and seasoning mix; stir. Cook 2 to 3 min. or until sauce is slightly thickened, stirring frequently. Remove skillet from heat.
- Top meat mixture with all remaining ingredients except WHEAT THINS.
- Serve with WHEAT THINS.
