WHEAT THINS-Beef Fajita Nachos Supreme

Combine fajitas and nachos into the best Mexican appetizer. Layer beef steak fajita filling with nacho toppings, then serve with WHEAT THINS Big Snacks.

Ingredients
  • ½ lb. beef skirt steak
  • 1 Tbsp. olive oil
  • 4 mini sweet peppers, sliced
  • 1 small red onion, sliced
  • 1 Tbsp. fajita seasoning mix
  • ¼ cup water
  • ½ cup shredded reduced-fat cheddar cheese
  • ¼ cup light sour cream
  • ¼ cup chopped tomatoes
  • ¼ cup chopped avocados
  • 2 green onions, chopped
  • 1 Tbsp. fresh cilantro
  • WHEAT THINS Big Snacks
Preparation
  • Cut steak across the grain into thin slices, then cut each slice in half.
  • Heat oil in medium cast-iron skillet on medium-high heat.  Add meat; cook and stir 4 to 5 min. or until browned.  Remove meat from skillet; set aside.
  • Add peppers and onions to skillet; cook 3 to 5 min. or until crisp-tender, stirring frequently.
  • Return meat to skillet.  Add water and seasoning mix; stir.  Cook 2 to 3 min. or until sauce is slightly thickened, stirring frequently.  Remove skillet from heat.
  • Top meat mixture with all remaining ingredients except WHEAT THINS.
  • Serve with WHEAT THINS.

Recipe Tips
  • Substitute
    Substitute 1 cup sliced medium bell peppers for the sliced mini peppers.
  • Substitute
    Prepare recipe as directed, using beef flank steak or London broil.
  • Cast Iron Skillet
    Preparing this dip in a cast-iron skillet helps it to stay warm when serving.  If you don't have a cast-iron skillet, you can instead cook the meat mixture using any 8- or 9-inch heavy skillet.  After simmering with the fajita seasoning mix and water, spoon the meat mixture into a serving dish, then continue as directed.
