
TRISCUIT-Sweet Potato Pull-Apart Jack-o'-Lantern
This Halloween appetizer makes not only a cute pumpkin but is a platter of whole wheat crackers topped with a creamy sweet potato mixture and pecans.

Ingredients
- ¼ cup pecan halves, divided
- 36 TRISCUIT Crackers
- 4 oz. Neufchatel cheese, softened
- ½ cup cooled mashed sweet potatoes
- 2 Tbsp. brown sugar
- ½ cup miniature marshmallows
- ¼ tsp. ground cinnamon
- 3 cinnamon sticks
Preparation
- Heat broiler.
- Cover baking sheet with parchment paper. Reserve 8 nuts for later use; chop remaining nuts.
- Arrange crackers, with sides touching, in 6 rows of 6 crackers each on prepared baking sheet.
- Mix Neufchatel cheese, potatoes and sugar until blended; spread onto crackers. Top with chopped nuts and marshmallows.
- Broil, 4 inches from heat, 1 to 2 min. or until marshmallows are lightly toasted. Sprinkle with cinnamon.
- Decorate with reserved nuts and cinnamon sticks to resemble a jack-o'-lantern as shown in photo.
