TRISCUIT Meatless Meatball Gyros

Try these delicious vegetarian appetizers topped in all the flavors of a Greek gyro, with hearty meatball slices, tomatoes, tzatziki, cucumber and onion.

Ingredients
  • 6 meatless meatballs (1 oz. each)
  • 2 tsp. lemon juice
  • 6 campari tomatoes, each cut into 4 slices
  • 24 TRISCUIT Crackers
  • 6 Tbsp. tzatziki
  • 2 Tbsp. EACH finely chopped cucumbers and red onions
  • 24 fresh dill sprigs
Preparation
  • Cook meatballs as directed on package.
  • Cut each meatball into 4 slices; place in medium bowl.  Drizzle with lemon juice.
  • Place tomato slices on crackers; top with meatball slices and remaining ingredients.

  • How to Prepare a Dairy-Free Tzatziki
    To make this a vegan-style appetizer, these snacks should be prepared using a dairy-free tzatziki.  If you can't find one in your grocery store, you can easily make your own by mixing the juice of 1 lemon with 1-1/2 cups plain dairy-free yogurt, 1 Tbsp. white wine vinegar, 1/2 tsp. salt and 1/4 tsp. pepper in medium bowl.  Grate 1 cucumber; squeeze cucumber to remove excess liquid.  Add cucumber to yogurt mixture along with 2 minced garlic cloves, 1 tsp. chopped fresh dill and 2 tsp. olive oil; mix well.  Refrigerate 3 hours before using as directed.  Store leftovers in refrigerator up to 1 week before using as desired, such as a topping for salads or as a dip for fresh vegetables.
  • Make it Spicy
    For added heat and flavor, drizzle topped crackers with Sriracha sauce (hot chili sauce) before serving.
  • Substitute
    Not a vegetarian but trying to cut back on red meat? You can instead prepare these fun topped crackers using chicken meatballs or turkey meatballs.
