TRISCUIT Bacon & Swiss Bake

This vegetable, bacon and egg bake is a festive holiday breakfast entree when you top the dish with a decorative cracker Christmas tree.

  • 23 TRISCUIT Crackers, divided
  • 1 cup shredded Swiss cheese
  • 4 green onions, chopped
  • 1 cup mixed chopped red and yellow peppers
  • 4 slices cooked bacon, crumbled
  • 6 eggs, beaten
  • 2 cups milk
  • ½ cup grated Parmesan cheese
  • ⅛ tsp. ground nutmeg
  • Heat oven to 375°F.
  • Reserve 7 crackers for later use; place remaining crackers in single layer on bottom of 9-inch square baking dish sprayed with cooking spray. Top with Swiss cheese, onions, peppers and bacon.
  • Mix remaining ingredients until blended; pour over ingredients in baking dish.
  • Arrange reserved crackers over ingredients in baking dish to resemble a Christmas tree; press lightly into egg mixture to secure.
  • Bake 30 to 35 min. or until knife inserted into center comes out clean. Cool 5 min. before cutting to serve.
Recipe Tips
  • Special Extra
    Cut a star out of the unused red pepper piece; place on top of cracker tree before serving.
  • Make it Meatless
    Omit the bacon for a meatless dish.

    Sprinkle lightly with additional ground nutmeg before serving.
