Triple-Berry Bread Pudding

Fresh berries, eggs and milk create a rich bread pudding with FIG NEWTONS Cookies. Easy enough for a weeknight dessert but delicious enough for a special occasion!

  • 1 cup mixed fresh strawberries, raspberries and blueberries
  • 1 pkg. (10 oz.) 100% Whole Grain FIG NEWTONS Fruit Chewy Cookies, quartered
  • 2 eggs
  • 2 cups milk
  • 2 Tbsp. butter, melted
  • 1 Tbsp. vanilla
  • ¾ cup sugar
  • Heat oven to 325°F.
  • Cut strawberries into quarters, then cut raspberries in half. Combine fruit and cookies in 9-inch square pan sprayed with cooking spray.
  • Whisk remaining ingredients until blended; pour over fruit mixture. Let stand 10 min.
  • Bake 55 min. or until center is set. Cool slightly.
