
Triple-Berry Bread Pudding
Fresh berries, eggs and milk create a rich bread pudding with FIG NEWTONS Cookies. Easy enough for a weeknight dessert but delicious enough for a special occasion!

Ingredients
- 1 cup mixed fresh strawberries, raspberries and blueberries
- 1 pkg. (10 oz.) 100% Whole Grain FIG NEWTONS Fruit Chewy Cookies, quartered
- 2 eggs
- 2 cups milk
- 2 Tbsp. butter, melted
- 1 Tbsp. vanilla
- ¾ cup sugar
Preparation
- Heat oven to 325°F.
- Cut strawberries into quarters, then cut raspberries in half. Combine fruit and cookies in 9-inch square pan sprayed with cooking spray.
- Whisk remaining ingredients until blended; pour over fruit mixture. Let stand 10 min.
- Bake 55 min. or until center is set. Cool slightly.
