
Stuffed Mushroom Dip

Ingredients
- TRISCUIT Thin Crisps Crackers
- 1 Tbsp. butter
- 1 lb. fresh mushrooms, finely chopped
- 1 red pepper, finely chopped
- 1 clove garlic, minced
- 2 Tbsp. grated Parmesan cheese
- 2 Tbsp. light sour cream
Preparation
- Crush 30 crackers.
- Melt butter in large nonstick skillet on medium-high heat. Add mushrooms, peppers and garlic; cook 8 min. or until peppers are crisp-tender and liquid is cooked off, stirring occasionally. Remove from heat.
- Stir in cracker crumbs, cheese and sour cream.
- Serve with additional crackers.
