Stuffed Mushroom Dip Recipe

Ingredients

  •  TRISCUIT Thin Crisps Crackers
  • 1 Tbsp. butter
  • 1 lb. fresh mushrooms, finely chopped
  • 1 red pepper, finely chopped
  • 1 clove garlic, minced
  • 2 Tbsp. grated Parmesan cheese
  • 2 Tbsp. light sour cream

Instructions

  • Crush  30 crackers.
  • Melt  butter in large nonstick skillet on medium-high heat. Add mushrooms, peppers and garlic; cook 8 min. or until peppers are crisp-tender and liquid is cooked off, stirring occasionally. Remove from heat.
  • Stir  in cracker crumbs, cheese and sour cream.
  • Serve  with additional crackers.

Recipe Tips

Make AheadThis savory dip can be baked ahead of time. Spoon hot dip into microwaveable dish; cool. Refrigerate up to 24 hours. When ready to serve, microwave, uncovered, on HIGH 2 min. or until heated through.

Special ExtraSlice additional mushrooms; cook until tender. Spoon over top of dip just before serving. Garnish with fresh parsley.
