
Spinach Dip

Ingredients
- 1 small onion, chopped
- 4 cups tightly packed baby spinach leaves (2-1/2 oz.)
- 1 pkg. (8 oz.) Neufchatel cheese, cubed
- 1 Tbsp. fresh lemon juice
- ⅛ tsp. freshly ground black pepper
- TRISCUIT Thin Crisps Parmesan Garlic Crackers
Preparation
- Cook onions in large nonstick skillet on medium heat 5 min. or until crisp-tender, stirring frequently. Add spinach; cook and stir 2 min. or just until wilted.
- Add Neufchatel; cook 1 to 2 min. or until Neufchatel is completely melted and mixture is well blended, stirring constantly.
- Spoon dip into serving bowl; stir in lemon juice and pepper.
- Serve with Thin Crisps.
