
Spicy Lemon-Chicken Topper

Ingredients
- 28 TRISCUIT Cracked Pepper & Olive Oil Crackers, divided
- ½ lb. ground chicken
- ½ tsp. zest and 1 tsp. juice from 1 lemon, divided
- ½ tsp. chopped fresh oregano
- 3 Tbsp. plain nonfat Greek-style yogurt
- Dash ground red pepper (cayenne)
- 18 baby spinach leaves
- 3 Tbsp. finely chopped tomatoes
Preparation
- Crush 10 crackers finely. Mix with chicken, lemon zest and oregano just until blended. Shape into 18 (1-inch) patties. Cook in nonstick skillet on medium-high heat 2 to 3 min. on each side or until done (165°F).
- Mix yogurt, red pepper and lemon juice until blended.
- Top remaining crackers with spinach, burgers, yogurt mixture and tomatoes just before serving.
