Spicy Chicken Ranch Melt

Ingredients
  • 2 oz. (1/4 of 8-oz. pkg.) pepper Jack cheese, cut into 8 slices
  • 16 RITZ Crackers
  • 6 oz. cooked boneless skinless chicken breast, cut into 16 slices
  • 3 Tbsp. ranch dressing
  • 1 green onion, sliced
  • 4 cherry tomatoes, quartered
Preparation
  • Heat oven to 350°F.
  • Cut cheese slices crosswise in half. Place crackers in single layer on baking sheet; top with chicken and cheese.
  • Bake 5 to 6 min. or until cheese is melted.
  • Top with remaining ingredients.
Recipe Tips
  • Substitute
    Substitute 1 sliced fresh jalapeño pepper for the green onions.
  • Shortcut
    Top crackers with cheese, chicken, dressing, onions and tomatoes, and omit the oven baking step. 
  • Substitute
    Prepare recipe using leftover roasted or grilled chicken, or thinly sliced deli smoked turkey.
