
Sausage, Egg & Cheese RITZwich

Ingredients
- 2 eggs
- 1 Tbsp. milk
- 6 oz. breakfast pork sausage
- 24 RITZ Crackers
- 2 American cheese singles, each cut into 6 pieces
Preparation
- Heat oven to 350°F.
- Whisk eggs and milk until blended; cook in heavy nonstick skillet sprayed with cooking spray on medium heat 1 to 2 min or until almost set; turn. Cook 1 min. or until completely set. Remove from skillet; cut into 12 pieces.
- Shape sausage into 12 (1-inch) patties. Add to same skillet; cook on medium-high heat 1 to 2 min. on each side or until done. Remove from skillet; drain on paper towels.
- Place 12 crackers in single layer on baking sheet; top with sausage, eggs and cheese.
- Bake 3 min. or until cheese is melted. Top with remaining crackers.

- Make Ahead
The eggs and sausage can be cooked ahead of time. Cool, then refrigerate in separate containers up to 3 days. When ready to serve, place in single layer on microwaveable plate. Microwave 15 to 20 sec. or until heated through. Use to assemble sandwiches as directed. - Variation
