Roasted Beet & Goat Cheese Topper Recipe

Ingredients

  • 6 TRISCUIT Rosemary & Olive Oil Crackers
  • 2 Tbsp. goat cheese
  • 2 small roasted beets (2 inch), cooled, peeled and cut into 6 slices each
  • 3/4 tsp. chopped pistachios
  • 3/4 tsp. balsamic glaze

Instructions

  • Spread  crackers with cheese.
  • Top  with beets and nuts.
  • Drizzle  with glaze.

How to Roast the BeetsScrub beets; brush lightly with oil. Wrap individually in foil. Bake in 375°F oven 25 to 30 min. or until tender. Cool slightly; remove peels, then use beets as directed.
