Roasted Beet & Goat Cheese Topper Recipe

Ingredients

  • 4 TRISCUIT Rosemary & Olive Oil Crackers
  • 1/2 tsp. chopped pistachios
  • 2 tsp. goat cheese
  • 2 small roasted beets (2 inch), cooled, peeled and cut into 4 slices each
  • 1/2 tsp. balsamic glaze

Instructions

  • Spread  crackers with cheese.
  • Top  with remaining ingredients.
  • Serve  immediately.

How to Roast BeetsScrub beets; brush lightly with oil. Wrap individually in foil. Bake in 375°F oven 25 to 30 min. or until tender. Cool slightly; remove peels, then use beets as directed.
