RITZ Sriracha-Chicken Lettuce Wraps

If you love traditional lettuce wraps, try this slightly spicier version made with homemade lightly breaded chicken tenders. A fun party appetizer!

Ingredients
  • 2 eggs
  • 3 Tbsp. Sriracha sauce (hot chili sauce), divided
  • 30 RITZ Crackers, crushed
  • 1 lb. chicken tenders (about 8), cut lengthwise into thirds
  • ½ cup mayonnaise
  • 12 Boston lettuce leaves
  • ½ cup baby carrots, cut into matchlike sticks
  • 1 large red pepper, cut into matchlike sticks
  • 3 green onions, cut into matchlike sticks
Preparation
  • Heat oven to 400°F.
  • Whisk eggs and 2 Tbsp. Sriracha sauce in shallow dish until blended. Add cracker crumbs to second shallow dish.
  • Spray foil-covered baking sheet with cooking spray. Dip 1 chicken piece into egg mixture, then crumb mixture, turning to evenly coat both sides of each chicken piece with each ingredient. Press crumbs gently into chicken to secure; place on prepared baking sheet. Repeat with remaining chicken pieces. Spray chicken pieces lightly with cooking spray.
  • Bake 5 to 10 min. or until chicken is done. Meanwhile, mix mayonnaise and remaining Sriracha sauce in serving bowl until blended; place on large platter.
  • Add lettuce and chicken strips to platter. Place carrots, peppers and onions in separate bowls, then add to platter.
  • Invite your guests to top lettuce leaves with remaining ingredients to make their own lettuce wrap.
Recipe Tips
  • Special Extra
    Add 12 (6-inch) warmed flour or corn tortillas to platter. Prepare lettuce wraps as directed, then wrap each in tortilla to serve.
  • Variation
    Prepare recipe as directed, using Romaine lettuce leaves and/or substituting ranch dressing for the mayonnaise.
  • Substitute
    Substitute firm white fish fillets, such as cod, for the chicken.
