Ingredients
- 8 oz. ground beef
- 8 oz. Mexican chorizo, casings removed
- ½ cup chopped onions
- 1 large clove garlic, minced
- 1 cup rinsed canned black beans, mashed
- ⅓ cup golden raisins, chopped
- ½ tsp. ground cumin
- ¼ tsp. ground cinnamon
- 96 RITZ Crackers, divided
- 8 pepper Jack cheese slices, each cut into 6 pieces
Preparation
- Heat oven to 350°F.
- Cook first 4 ingredients in nonstick skillet on medium-high heat until meat is done, stirring frequently. Add all remaining ingredients except crackers and cheese; cook 5 min., stirring occasionally.
- Place 48 crackers in single layer on baking sheet; top with meat mixture and cheese.
- Bake 3 min. or until cheese is melted. Top with remaining crackers to make 48 "empanadas."

- Spice it Up
Add 1/4 tsp. ground red pepper (cayenne) to cooked meat mixture along with the cumin and cinnamon.
