RITZ Cajun Chicken Topper

Whether you need the best appetizer for Mardi Gras or just a fun party, these bite sized Cajun spiced chicken, pepper and blue cheese stacks are the right choice.

ServingsMakes 8 servings, 4 topped crackers each.
  • 4 chicken tenders (1/2 lb.)
  • 1 tsp. Cajun seasoning
  • 2 tsp. olive oil
  • 1 green pepper, cut into thin strips
  • 32 RITZ Crackers
  • 2 Tbsp. blue cheese dressing
  • Heat grill to medium heat.
  • Toss chicken with Cajun seasoning. Grill 4 to 5 min. on each side or until done. Cool 5 min.
  • Meanwhile, heat oil in small skillet on medium heat. Add peppers; cook 2 min. or until crisp-tender, stirring frequently.
  • Cut each chicken tender into 8 slices.
  • Top crackers with peppers and chicken; drizzle with dressing.
