RITZ Arequipe Bites

ServingsMakes 4 servings, 4 topped crackers each.
  • 4 cups (1 qt.) whole milk
  • 1¼ cups sugar
  • ¼ tsp. baking soda
  • 16 RITZ Crackers
  • 4 strawberries, thinly sliced, slices halved
  • Bring milk, sugar and baking soda just to boil in large heavy saucepan on medium heat, stirring constantly.  
  • Simmer on low heat 3-1/2 to 4 hours or until milk mixture is thickened and golden brown in color, stirring frequently. (As mixture thickens, you may need to stir constantly to prevent milk mixture from sticking to bottom of pan and burning.) Cool 15 min.  Pour into bowl. 
  • Refrigerate 1 hour.
  • Spoon 1 tsp. arequipe onto each cracker just before serving; top with strawberries.  Refrigerate remaining arequipe up to 1 week before using as desired.

  • Substitute
    Top arequipe-topped crackers with other sliced fruit, shredded coconut, miniature chocolate chips, chocolate shavings and/or chopped nuts in place of strawberries.
  • How to Use the Remaining Arequipe Mixture
    Serve the remaining arequipe as a topping for cookies, pound cake, pancakes, waffles or ice cream.
  • Make it Easy
    For a simple, no-cook take on these RITZ Arequipe Bites, top each of 16 RITZ Crackers with 1 tsp. canned dulce de leche or cajeta instead of the homemade arequipe.
