
Pulled Pork-Sofrito RITZwich

Ingredients
- 1 Tbsp. oil
- ½ cup sofrito tomato sauce
- 1½ cups fully cooked pulled pork
- 2 pepper Jack cheese slices, each cut into 8 pieces
- 32 RITZ Crackers
Preparation
- Heat oven to 350°F.
- Heat oil in medium skillet on medium heat. Add sofrito sauce; cook and stir 2 min. Add meat; cook 2 min. or until heated through, stirring frequently. Remove from heat.
- Place 16 crackers in single layer on baking sheet; top with cheese.
- Bake 3 min. or until cheese is melted.
- Top with meat mixture and remaining crackers to make 16 sandwiches.

The meat mixture can be cooked ahead of time. Cool, then refrigerate up to 24 hours. When ready to serve, microwave meat mixture on HIGH 1 to 2 min. or until heated through, then use to top crackers with remaining ingredients as directed. - Where to Find the Sofrito Tomato Sauce

Be sure to use a pulled pork that is cooked without barbecue sauce, so that the flavor of the sofrito sauce comes through.
