Pull-Apart Basketball "Taco" Recipe

Ingredients

  • 1 lb. extra-lean ground beef
  • 1 pkg. (1 oz.) reduced-sodium taco seasoning mix
  • 38 RITZ Crackers, divided
  • 1 cup finely shredded Mexican cheese blend
  • 1 green onion, thinly sliced
  • 1/4 cup chopped pickled jalapeño slices
  • 1/4 cup sour cream
  • 1/3 cup sliced black olives

Instructions

  • Heat  oven to 350°F.
  • Cook  meat with taco seasoning mix as directed on package; cool slightly.
  • Meanwhile,  arrange 19 crackers, with top sides down and sides touching, in solid 9-inch round on parchment-covered baking sheet. (See tip.)
  • Spoon  meat mixture over crackers; top with cheese, onions and jalapeño slices. Cover with remaining crackers, top sides up, to make 19 sandwiches.
  • Bake  10 to 12 min. or until meat mixture is heated through and cheese is melted.
  • Use  sour cream to make the seams of the basketball; top sour cream with olives. Serve warm.

Recipe Tips

How to Shape the RITZ Crackers into 9-inch RoundTo make the 9-inch round of crackers, use 12 crackers to make the outer ring of the circle. Then, use 6 of the remaining crackers to make the inner ring. Add remaining cracker to center of ring.

How to Easily Garnish to Resemble BasketballSpoon sour cream into small resealable plastic bag; press bag to remove excess air before sealing. Cut small piece off one bottom corner of bag; use to pipe sour cream onto dip to resemble lines of a basketball. Stand olive slices on ends to make the solid black lines for the seams.

Special ExtraDon't worry if some of the taco filling goes "out of bounds" while enjoying this appetizer - just scoop it up with additional RITZ Crackers to enjoy.
