Ingredients
- 4 cups tightly packed coarsely chopped romaine lettuce
- 1 cup frozen corn, thawed, drained
- ½ cup loosely packed fresh cilantro
- ½ cup rinsed canned low-sodium black beans
- ¼ cup chopped red peppers
- 2 Tbsp. light sour cream
- 2 Tbsp. finely chopped fresh salsa
- 20 PREMIUM Unsalted Tops Saltine Crackers
Preparation
- Toss lettuce with corn, cilantro, beans and peppers in medium bowl.
- Combine sour cream and salsa. Add to lettuce mixture; mix lightly.
- Serve with crackers.
