ServingsMakes 4 servings, 1-1/4 cups salad and 5 crackers each.
  • 4 cups tightly packed coarsely chopped romaine lettuce
  • 1 cup frozen corn, thawed, drained
  • ½ cup loosely packed fresh cilantro
  • ½ cup rinsed canned low-sodium black beans
  • ¼ cup chopped red peppers
  • 2 Tbsp. light sour cream
  • 2 Tbsp. finely chopped fresh salsa
  • 20 PREMIUM Unsalted Tops Saltine Crackers
  • Toss lettuce with corn, cilantro, beans and peppers in medium bowl.
  • Combine sour cream and salsa. Add to lettuce mixture; mix lightly.
  • Serve with crackers.
Nutrition Notes

You won't want to pass up this Mexican-inspired salad that's low in both fat and sodium. And as a bonus, the lettuce is high in vitamin A and the colorful combination of vegetables makes it an excellent source of vitamin C. Enjoy!

Recipe Tips
  • For a Spicier Flavor
    Increase sour cream to 1/4 cup, and substitute 1 Tbsp. finely chopped canned chipotle peppers in adobo sauce for the salsa.

    Add 1 cup shredded cooked chicken or 1/2 cup chopped avocados to salad ingredients before tossing with the sour cream mixture.
