
Pimento Cheese Candy Cane

Ingredients
- 1 cup reduced-fat cottage cheese
- 1 jar (4 oz.) chopped pimientos, drained
- 2 Tbsp. reduced-fat mayonnaise
- 1 tsp. hot pepper sauce
- 1 pkg. (7 oz.) shredded reduced-fat cheddar cheese
- 1 red pepper, cut into thin strips
- 1 cup fresh sugar snap peas
- 1 small jicama, peeled, cut into 1/2-inch wide sticks
- 25 PREMIUM Multigrain Saltine Crackers
Preparation
- Process first 5 ingredients in food processor until smooth.
- Place large scoops of cottage cheese mixture in candy cane-shape on platter. Smooth with knife or spatula. Decorate with pepper strips to resemble a candy cane.
- Serve with remaining pepper strips, sugar snap peas, jicama and crackers.
