What are the secrets of this smart cheese ball makeover? Sharp cheddar cheese combines with smooth Neufchatel for better-for-you creaminess.

ServingsMakes 24 servings, 2 Tbsp. cheese mixture, 2 pieces celery and 3 crackers each.
  • 2 pkg. (8 oz. each) Neufchatel cheese, softened
  • ½ cup shredded reduced-fat sharp cheddar cheese
  • 1 Tbsp. finely chopped red peppers
  • 1 Tbsp. finely chopped green onions
  • 2 tsp. Dijon mustard
  • ½ cup finely chopped fresh parsley
  • 12 stalks celery, cut crosswise into quarters
  • RITZ Crackers with Whole Wheat
  • Beat Neufchatel cheese and cheddar cheese in small bowl with mixer until blended.
  • Add peppers, onions and mustard; mix well.
  • Refrigerate 1 hour.
  • Shape cheese mixture into ball; roll in parsley.
  • Serve with celery and crackers.

    We made over our original Party Cheese Ball by coating the cheese ball with parsley instead of nuts, reducing the amount of cheese and using Neufchatel cheese and 2% Milk cheddar instead of full-fat cheeses. Finally, we serve the cheese ball with RITZ Whole Wheat Crackers.

    Serve with RITZ Reduced Fat Crackers instead of the RITZ Crackers with Whole Wheat.
