Orange Cranberry Dream

We know potlucks aren't a competition, will so win with this dessert. Fruity cranberry gelatin meets mandarin oranges and fluffy cream cheese for an impressively tasty treat.

  • 1½ cups boiling water
  • 1 pkg. (6 oz.) cranberry gelatin
  • 1 can (16 oz.) whole berry cranberry sauce
  • 1½ cups cold water
  • 12 HONEY MAID Honey Grahams, finely crushed (about 1-1/2 cups crumbs)
  • ½ cup butter or margarine, melted
  • ½ cup sugar, divided
  • 1 pkg. (8 oz.) brick cream cheese, softened
  • 1 tub (12 oz.) frozen whipped topping, thawed
  • 1 can (11 oz.) mandarin orange segments, drained
  • Add boiling water to dry gelatin mix in large bowl; stir 2 min. until completely dissolved. Add cranberry sauce; stir until melted. Stir in cold water.
  • Refrigerate 1-1/4 hours or until gelatin mixture is slightly thickened.  Meanwhile, combine graham crumbs, butter and 1/4 cup sugar; press onto bottom of 13x9-inch dish. Refrigerate until ready to use.
  • Beat cream cheese and remaining sugar in large bowl with whisk until well blended. Stir in 3 cups whipped topping. Spread over crust.
  • Stir oranges into gelatin mixture; pour over cream cheese layer.
  • Refrigerate 3 hours or until firm.
  • Serve topped with the remaining whipped topping.

  • Variation
    Prepare recipe as directed, using Neufchatel cheese and frozen lite whipped topping, and decreasing the butter to 6 Tbsp.
  • How to Soften the Cream Cheese
    Place completely unwrapped package of cream cheese on microwaveable plate. Microwave on HIGH 15 sec. or just until cream cheese is slightly softened.
  • Substitute
    Prepare using 2 pkg. (3 oz. each) cranberry gelatin
