NILLA Lemon Bars

Enjoy these delicious lemon bars, made with fresh lemons, when you need a simple but classic dessert. A vanilla wafer crust adds a special touch.

  • 60 NILLA Wafers, finely crushed
  • ⅓ cup butter, melted
  • 1½ cups granulated sugar, divided
  • ¼ cup flour
  • 1 tsp. baking powder
  • 3 eggs
  • 3 Tbsp. zest and 1/4 cup juice from 3 large lemons
  • 1 Tbsp. powdered sugar
  • Heat oven to 350°F.
  • Combine wafer crumbs, butter and 1 Tbsp. granulated sugar; press onto bottom of foil-lined 13x9-inch pan sprayed with cooking spray.
  • Combine flour, baking powder and remaining granulated sugar in medium bowl. Whisk eggs, lemon zest and lemon juice until blended. Add to flour mixture; mix well. Pour over crust.
  • Bake 20 min. or until center is set. Cool completely.
  • Refrigerate 1 hour or until chilled.
  • Sprinkle with powdered sugar just before serving.

  • How to Cut Cleanly
    Use a moistened sharp knife to cut the dessert into bars, carefully wiping the knife blade clean with a damp towel between cuts.
