
Mini "Cannoli" Sandwiches

Ingredients
- ½ cup ricotta cheese
- 1 Tbsp. powdered sugar
- ½ tsp. orange zest
- ½ tsp. vanilla
- ¾ cup plus 1 Tbsp. miniature semi-sweet chocolate chips, divided
- 30 NILLA Wafers
- 1 pkg. (4 oz.) white baking chocolate
Preparation
- Beat first 4 ingredients with mixer until blended. Stir in 1 Tbsp. chocolate chips; spoon onto 15 wafers. Cover with remaining wafers to make 15 sandwiches.
- Place in single layer in waxed paper-lined pan. Refrigerate 1 hour.
- Melt white chocolate as directed on package. Dip sandwiches halfway into melted chocolate, then in remaining chocolate chips. Return to prepared pan.
- Refrigerate 30 min. or until chocolate coating is firm.

Like traditional cannoli, these are best served when the wafers are still crisp. If making these tasty treats more than 6 hours before serving, prepare the ricotta filling as directed then refrigerate until ready to spread onto the wafers an hour or so before serving. - Substitute
Substitute 3/4 cup multi-colored or chocolate sprinkles, or chopped pistachios for the mini chocolate chips used for dipping. - Size Wise
