Ingredients
- 6 oz. lean ground beef
- 2 Tbsp. reduced-sodium fajita seasoning mix
- 2 Tbsp. water
- 48 RITZ Crackers
- 6 pepper Jack cheese slices (3/4 oz. each), each cut into 8 pieces
- ⅓ cup shredded iceberg lettuce
- 2 Tbsp. sour cream
- 2 Tbsp. finely chopped tomatoes
- 24 black oliveslices
Preparation
- Heat oven to 350°F.
- Brown meat in skillet on medium-high heat, stirring frequently. Add fajita seasoning mix and water; cook 2 min., stirring frequently.
- Place crackers, top sides down, in single layer on baking sheet; top with cheese. Bake 3 min. or until cheese is melted.
- Top 24 crackers with meat mixture; cover with remaining crackers, cheese sides down. Top with remaining ingredients.

The meat mixture can be prepared ahead of time; cool completely. Refrigerate up to 24 hours. When ready to serve, microwave meat mixture on HIGH 1 min. or until heated through, then use to prepare recipe as directed.
