Horchata is a sweet, milky, rice-based drink served throughout Mexico. These squares combine a classic cooked custard with rice, vanilla and cardamom to create a creamy topping that melds beautifully with a HONEY MAID Graham crust. A dusting of cinnamon and brown sugar tops off the confection.

Horchata Squares Recipe


  • 6 HONEY MAID Honey Grahams
  • 1 cup milk, divided
  • 1 cup hot cooked long-grain white rice
  • 3 eggs
  • 1/2 cup granulated sugar
  • 1/2 tsp. vanilla
  •  dash salt
  •  dash ground cardamom
  • 2 Tbsp. brown sugar
  • 1/2 tsp. ground cinnamon


  • Arrange  grahams in single layer on bottom of 9-inch square pan sprayed with cooking spray, breaking as necessary to fit.
  • Blend  1/4 cup milk and rice in blender until smooth.
  • Whisk  eggs in small bowl until blended. Bring remaining milk and granulated sugar just to simmer in medium saucepan on medium heat, stirring constantly. Add about 1/4 cup milk mixture to eggs; mix well. Return to milk mixture in saucepan; mix well. Stir in rice mixture, vanilla, salt and cardamom. Cook 6 to 8 min. or until thickened, stirring constantly. (Mixture should register between 175° and 180°F on instant-read thermometer.)
  • Pour  milk mixture over grahams in pan. Combine brown sugar and cinnamon; sprinkle over dessert. Refrigerate 6 to 8 hours or until firm.

Food FactsA member of the ginger family, ground cardamom is made from seeds of the green cardamom pod and is often used in baked goods for its spicy sweet, almost floral, flavor. A little cardamom goes a long way. If you don't have any ground cardamom on hand, you can use ground ginger, cinnamon, allspice or nutmeg instead.
