
Honey-Chipotle Chicken Nachos
Using frozen honey bbq bite-size chicken pieces helps make these nachos come together oh so quickly. Just spread the chicken over cheese-topped WHEAT THINS, then add layers of chopped green peppers and more cheese and bake until cheese is melted.

Ingredients
- 8 oz. (1/3 of 24-oz. pkg.) frozen honey bbq boneless breaded bite-size chicken pieces
- 1 pkg. (8 oz.) WHEAT THINS Big Snacks
- 1½ cups shredded reduced-fat Colby and Monterey Jack cheese, divided
- ¼ cup honey chipotle barbecue sauce, divided
- 2 Tbsp. chopped green peppers
- 2 Tbsp. light sour cream
Preparation
- Heat oven to 400°F.
- Place chicken on foil-lined baking sheet sprayed with cooking spray. Bake 15 to 20 min. or until done (165°F), turning after 10 min. Remove from oven.
- Reduce oven to 350°F. Cover separate baking sheet with parchment; spray with cooking spray. Place single layer of WHEAT THINS, with sides overlapping slightly, on prepared baking sheet. Top with 1 cup cheese.
- Cut chicken into 1/2-inch pieces; toss with 2 Tbsp. barbecue sauce. Spoon over topped WHEAT THINS; top with peppers and remaining cheese.
- Bake 5 to 7 min. or until cheese is melted.
- Drizzle with sour cream and remaining barbecue sauce before serving.

Use two small resealable plastic bags, with one small corner cut off bottom of each bag, to drizzle the sour cream and remaining barbecue sauce over nachos. - Variation
Prepare using any baked frozen breaded chicken product, such as chicken tenders, nuggets or popcorn chicken. Or, substitute 1-1/4 cups chopped cooked chicken or rotisserie chicken for the cut-up baked breaded chicken pieces.
