Ingredients
- 24 TRISCUIT Crackers
- 1 cup sliced heirloom cherry tomatoes
- 1 Tbsp. extra virgin olive oil
- ½ cup part-skim ricotta cheese
- ½ cup shredded low-moisture part-skim mozzarella cheese
- 2 Tbsp. grated Parmesan cheese
- 6 large fresh basil leaves, thinly sliced
- ⅛ tsp. freshly ground black pepper
Preparation
- Heat oven to 375°F.
- Place crackers, with sides touching, in 6 rows of 4 crackers each on parchment-covered baking sheet. Toss tomatoes with oil.
- Combine cheeses; spoon onto crackers. Top with tomatoes.
- Bake 5 min. or until cheese mixture is melted.
- Top with basil; sprinkle with pepper.
