Grilled Salmon & Spinach Topper

ServingsMakes 3 servings, 4 topped crackers each.
  • 2 tsp. olive oil
  • 3 cups tightly packed baby spinach leaves
  • 2 cloves garlic, minced
  • 12 TRISCUIT Dill & Olive Oil Crackers
  • 2 oz. grilled skinless salmon fillet, cut into 12 pieces
  • 12 sprigs fresh dill
  • Heat oil in small skillet on medium heat.
  • Add spinach and garlic; cook 3 to 4 min. or just until spinach is wilted, stirring frequently. Drain well.
  • Top crackers with spinach, fish and dill.
