  • 3 Tbsp. goat cheese
  • 2 tsp. chopped fresh parsley
  • 8 TRISCUIT Reduced Fat Crackers
  • 2 large cremini mushrooms, each cut into 4 slices, grilled
  • 2 tsp. finely chopped mixed green, red and yellow peppers
  • Roll cheese into 8 balls.
  • Flatten each into 1-1/2-inch round.
  • Roll edges of cheese rounds in parsley; place on crackers.
  • Top with vegetables.

  • How to Grill the Mushrooms
    Heat heavy grill pan on medium-high heat. Add mushroom slices; cook 1 to 2 min. on each side or just until tender and lightly grill-marked. Grill extra vegetables whenever you are using your grill pan so you have them on hand for preparing more of these tasty cracker toppers.
