Ingredients
- 3 Tbsp. goat cheese
- 2 tsp. chopped fresh parsley
- 8 TRISCUIT Reduced Fat Crackers
- 2 large cremini mushrooms, each cut into 4 slices, grilled
- 2 tsp. finely chopped mixed green, red and yellow peppers
Preparation
- Roll cheese into 8 balls.
- Flatten each into 1-1/2-inch round.
- Roll edges of cheese rounds in parsley; place on crackers.
- Top with vegetables.
